Pear & Rocket Salad

  • Ingredients

    1 large pear or 2 smaller pears (Williams, Nashy) — whatever you can get

    100 g rocket

    1/4 cup slivered almonds (toasted)
    1/4 cup shaved parmesan cheese

    Dressing

    1 tbsp olive oil

    1 tbsp balsamic vinegar

    salt & pepper

    Make a litte more if you like a little more dressing.

    Hot tip: If your pears are firm, slice 'em thin. If they’re soft, chunk ‘em up. Either way, they’ll disappear fast.

  • Method

    Peppery rocket brings the bite, sweet balsamic smooths it out, and crunchy pear keeps things fresh. Parmesan adds the perfect tangy kick, while toasted almonds bring a little nutty, earthy magic.

    Toast the slivered almonds.

    Use a small fry a pan and dry fry — careful not to burn — they should be golden. Set aside to cool.

    Slice the pears Thin is better, they'll take on more flavour and add them to a bowl. Add the rocket

    Make the dressing (shake it up) we love lots of salt & pepper too.

    WHEN YOU ARE READY TO SERVE

    Toss the dressing through, the rocket & pears.

    Shave the parmesan — Use a potato peeler, and sprinkle over the rocket & pear mix

    Add the Almonds — and away you go!
