Ingredients
500g chicken breasts cut into 2 cm pieces (about 2 breasts)
2 tbls extra-virgin olive oil
juice and zest of 1 lemon (about 2 tablespoons juice and 1 teaspoon zest)
2 cloves garlic minced (about 1 tsp)
2 tsp dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup white wine or chicken stock

Method
Mix olive oil, lemon juice & zest, garlic, oregano, salt & pepper. Coat the chicken in a bag or container. Marinate for 20 mins (or up to 24 hours if you’re organised and are not starving ;)
Heat a heavy cast-iron pan until very hot. Add chicken in an even layer. Don’t touch for 5 mins. Flip and cook another 5 mins, until golden and cooked through.
Pour in white wine, scrape up all the tasty bits, and let it cook down until the chicken is coated in pure flavour. This smells so good.
Serve hot. With bread. Because that sauce deserves it. We also like to add some fresh oregano (torn).
